 Fig and Gruyere Grilled Cheese

Ingredients

8 Slices of Sourdough Bread
20 Dried Black Mission Figs, stems removed
2 cups Freshly Grated Gruyere Cheese
4 Tbsp. Butter or Mayonnaise (not Kewpie)
1 Tbsp. Honey
3 Tbsp. Balsamic Vinegar
1 Tbsp. Fresh Dill, plus more to sprinkle
Dijon Mustard for serving 

Instructions

In a food processor, combine figs, honey, balsamic vinegar, and 1 Tbsp. fresh dill. Purée until smooth.

Spread fig mixture on one side of each piece of sourdough. Sprinkle with fresh dill.

Add ½ cup of gruyere cheese to each sandwich and top with bread.

Preheat a cast iron skillet over medium heat.

Spread butter or mayonnaise on one outside piece of the bread.

Place each sandwich, butter or mayonnaise side down, into the preheated skillet.

Cover skillet with lid and let sandwiches cook for 3-5 minutes, or until golden brown on one side and cheese has started to melt.

While the sandwiches are in skillet, spread butter or mayonnaise on the bare side of bread then flip each one.

Flip sandwiches and cook until golden brown on the second side, about 3-5 minutes.

Remove sandwiches from pan and serve with a side of Dijon mustard or alongside White Asparagus and Ham Soup
