Ginger Carrot Purée

Ginger Carrot Purée 

6 Servings | 10-minute Prep Time | 30-minute Cook Time

Ingredients

5-7 Large Carrots, peeled and cut into ¼ inch pieces
5 Tbsp Butter
1 tsp Fresh Ginger, peeled and grated
1 Tbsp Fresh Lemon Juice
1 tsp Salt
½ tsp Pepper
1 cup Filtered Water

 

Instructions

Bring carrots, butter, salt, and pepper to boil over medium high heat. Cover pan. Drop heat and simmer until carrots are fork tender, about 20 minutes.

Place carrots and half of the liquid from the pan into a blender.  Add grated ginger and half of the lemon juice.  Blend until smooth, adding additional liquid as necessary and according to taste.
