 Stewed Plums with Cardamom Ice Cream

Ingredients 

For Cardamom Ice Cream:
1 c. Heavy Whipping Cream, chilled
1 c. Sweetened Condensed Milk, chilled
¼ tsp. Vanilla Extract
¼ tsp. Ground Cardamom

For Stewed Plums: 
2-4 Plums, halved and stone removed
1 c. Water
½ c. Brown Sugar, packed
1 Tbsp. Balsamic Vinegar
1 Vanilla Bean, insides scraped and outer pod
1 Cinnamon Stick

Instructions

For Ice Cream:

Blend heavy cream in a large bowl using a hand mixer until stiff peaks form.

Slowly add the condensed milk into the cream while continuously blending with mixer.

Add vanilla and cardamom, blend once more to incorporate.

Pour mixture into a freezer-safe, air-tight container.

Cover and freeze for 4+ hours.  

 

For the Plums:

In a medium-sized saucepan, combine water, brown sugar, and balsamic vinegar. Bring to simmer and allow all of the sugar to melt, stirring periodically.  

Add vanilla bean, cinnamon stick, and plums.

Stew over medium heat for 20-45 minutes, depending on the size and ripeness of plums, or until fruit is soft and syrup has thickened.  

 

To Serve:

Place warm plums over cardamom ice cream and top with remaining syrup from plum pan.
