 Pork Chops with Pear Sauce

 4 Servings | 5-minute Prep Time | 15-minute Cook Time

Ingredients

2 lbs. Pork Chops, thick cut and bone-in
¾ c. All Purpose Flour
Olive Oil 
Salt 
Pepper

For Pear Sauce: 

3 Bosc Pears, peeled and roughly chopped with seeds removed
2 Tbsp Honey
2 tsp Apple Cider Vinegar
1 tsp Dijon Mustard
1 tsp Paprika

Instructions

Preheat oven to 400°F.

In a food processor, combine pears, honey, apple cider vinegar, Dijon mustard, paprika, salt and pepper.  Process until combined and the texture of apple sauce.

Preheat a cast iron skillet over medium-high heat with about 2 tablespoons of olive oil.

In a dish big enough to fit one pork chop at a time, add the flour and toss with salt and pepper to season.  Coat every side of each pork chop in the seasoned flour mixture, shaking off any excess.

Sear pork chops in the cast iron skillet until all sides are golden brown.

Place pork chops (in the skillet) in the preheated oven for 5-8 minutes.

Baste the pork chops with the pear sauce during the last 2 minutes of cooking.

Remove pork chops from oven and let them rest.

Serve with the heated pear sauce over mashed potatoes.
