Ginger Lemon Bars

 Ginger Lemon Bars

 12 Servings | 10-minute Prep Time | 45-minute Cook Time | Overnight and then 1-hour Rest Time

Ingredients

2 c. White Sugar
6 inches of Fresh Ginger Root, peeled and sliced into ½ inch pieces
2 c. Sifted All-Purpose Flour
1 c. Confectioners Sugar
1 c. Salted European Butter
1 tsp. Ground Cinnamon
4 Large Eggs
1 Tbsp. Ground Ginger
1 ½ tsp. Baking Powder
¼ c. All-Purpose Flour
⅔ c. Fresh Lemon Juice

Instructions

The night before baking, combine white sugar and sliced fresh ginger in a sealable container with lid. Let infuse overnight.

Preheat oven to 350°F.

Grease 9 x 13 baking pan with fat and dusting of flour.

In large bowl, combine sifted all-purpose flour, confectioners sugar, and ground cinnamon. Whisk to combine. Add melted butter and combine until dough forms.

Press dough into an even layer on bottom of prepared baking sheet with the heel of your hand.

Bake until golden brown, about 10-15 minutes. Remove from the oven and set aside.

Remove ginger pieces from white sugar. 

In a medium bowl, combine the ginger-infused white sugar, ground ginger, baking powder, and all-purpose flour until smooth and no lumps remain.

In a separate, large bowl, beat eggs with hand-mixer on medium for 30 seconds.

Add sugar mixture to eggs and stir to combine.

Add lemon juice to mixture and stir to thoroughly combine.

Pour mixture onto the crust and bake for 25-35 minutes, or until just barely set.

Let cool for at least an hour to finish setting.

Dust with confectioners sugar before cutting into 12 bars.
