 The Only Baked Potato Recipe You'll Ever Need

Ingredients

4 Medium-to-Large sized Potatoes
Olive Oil
Salt
Pepper
Butter or Sour Cream
Optional garnishes:  Chives, cheddar cheese, bacon bits

Instructions

Preheat oven to 425°F. Line baking sheet with parchment paper.

Thoroughly scrub potatoes clean under running water. Pat potatoes dry.  Pierce each potato with a fork multiple times, so steam can escape while they’re in the oven.

Coat each potato in olive oil and a heavy amount of salt and pepper. Place on baking sheet and bake for 45 minutes, turning halfway though.  Depending on the size of the potatoes, they may take more time.  To test potato doneness, cover with a clean kitchen towel to prevent burning your hand and give a slight squeeze, if the potato gives way and feels soft, they’re ready to come out of the oven.  If your potato is still firm, turn over once more and continue baking. Check every 10-15 minutes until baking is complete.

Once potatoes are finished in the oven, remove them, and cut a cross pattern on top.  Push the four “corners” of the potato down and fold it into itself to make a pocket.  Add butter, sour cream, bacon, chives, or whatever your favorite toppings are to your now perfectly cooked potatoes and enjoy.
