Summer Bruschetta

 Summer Bruschetta

Ingredients

6 Roma Tomatoes
2 Garlic Cloves
¼ cup Fresh Basil
¼ cup Parmesan Cheese
1 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
Salt to taste
Pepper to taste

Ciabatta bread or baguette

Instructions

Preheat oven to 400°F.

Remove seeds from tomatoes and dice.  Add to mixing bowl. Sprinkle with salt.

Chiffonade basil. Mince garlic.  Add parmesan, basil, garlic, olive oil, balsamic vinegar, and pepper to tomatoes and gently toss to combine. Taste. Adjust as necessary.

Slice bread with serrated knife, brush with olive oil, and sprinkle with salt. Place on baking sheet lined with parchment paper and toast in oven for 5-7 minutes, or until golden brown.

Remove bread from oven and top with tomato mixture.
