Cold Weather Salad

Ingredients
4 cups Broccoli Florets, trimmed to bite size
4 cups Brussels Sprouts, shredded
1 cup Sliced Almonds
½ cup Sunflower Seeds
½ cup Dried Sweetened Cranberries
½ cup Pomegranate Arils
For Dressing:
1 cup Mayonnaise
2 Tbsp Apple Cider Vinegar
2 Tbsp Fresh Lemon Juice
1 Tbsp Granulated Sugar
Salt, to taste
Pepper, to taste
Instructions
Preheat oven to 350°F.
Line a baking sheet with parchment paper. Spread almonds out on baking
sheet in a single layer. Toast almonds, about 7 minutes.
In sealable container, combine dressing ingredients and
shake to mix.
In large mixing bowl, add broccoli, brussels sprouts,
almonds, sunflower seeds, cranberries, and pomegranate arils. Top with the dressing and toss to combine.
