 Plum Custard Cake

Plum Kuchen

Ingredients

For Plum Base:

1 ½ cup All-purpose Flour
1 cup Brown Sugar, plus extra for coating plums
2 tsp Baking Powder
1 tsp Cinnamon, plus extra for coating plums
½ tsp Salt
1 Egg
¼ cup Milk
8 Tbsp Vegetable Oil
½ tsp Vanilla Extract
6-8 Plums 

For Custard Top:

½ cup Heavy Cream
½ cup Cane Sugar
1 Egg
1 tsp Vanilla Extract 

Instructions:

Preheat oven to 350°F.  Grease and flour a 9-inch springform cake pan.

In large mixing bowl, sift together flour, brown sugar, baking powder, cinnamon, and salt.

In a small bowl, combine egg, milk, vegetable oil, and vanilla extract.

Add wet ingredients to dry ingredients and mix thoroughly with wooden spoon until a wet ball of dough forms.  Leave in bowl until ready to bake.

Prepare plums by removing pits and quartering them. Dust with cinnamon and sugar if desired.

Press ball of dough into springform pan and dot with as many plums as possible.

Prepare custard by whisking together all ingredients in a liquid measuring cup.  Place in the refrigerator until ready to use.

Place springform pan on baking sheet and bake plum base for 25 minutes, or until the dough has created a crust/cake base.

Pour custard over the plums and bake for an additional 20-25 minutes, or until the custard has set.

Remove from oven. Let cool for 20 minutes, run knife around edge, and remove from pan.  Sprinkle with confectioner’s sugar and serve warm or cold.
