Lemon Garlic Lamb Chops

Ingredients
1 pound Lamb Rib Chops, cut from rack and frenched
2 Tbsp Fresh Lemon Juice
6 Sprigs Fresh Rosemary
3 Garlic Cloves
2 tsp Dried Thyme
2 tsp Pink Peppercorns
Olive Oil
Salt
Black Pepper
Instructions
Preheat cast iron skillet over medium-high heat.
Add lemon juice, half of the rosemary pulled from the stem,
garlic, thyme, pink peppercorns, salt, and black pepper to a food
processor. Pulse to chop until garlic
and herbs are thoroughly minced.
Coat each lamb chop with a small amount of olive oil, then cover
with the minced garlic and herb mixture.
Add lamb chops and remaining sprigs of rosemary to preheated
pan and sear for 2-3 minutes on each side, until internal temperature reaches 140°F.
Remove from pan and serve as is or with potatoes.
