Crispy Smashed Potatoes

Ingredients
12 Yellow Creamer Potatoes
Olive Oil
Salt
Instructions
In a medium-sized saucepan, cover potatoes with cold water.
Add a heavy amount of salt to the water.
Boil potatoes until fork tender.
Once potatoes are soft, remove them from the water and
carefully press down on each potato until flat. Use the back of another, clean
pan to press down. Alternatively, cover the potato with a towel to protect your
skin and press down with the palm of your hand to flatten.
Preheat a cast-iron skillet over medium-high heat.
Add olive oil to the pan.
Transfer flattened potatoes to the skillet and fry on both
sides, flipping once, until golden brown and crispy, about 4 minutes on each
side.
Serve immediately.
