 Shrimp Orzo

 2 Servings | 10-minute Prep Time | 30-minute Cook Time 

Ingredients

1 lb. Shrimp, shelled and deveined 
2 tsp. Cayenne Pepper
2 tsp. Paprika
4 Fresh Garlic Cloves, minced
3 Sundried Tomatoes, roughly chopped to small pieces
½ c. Orzo
1 ½ c. Vegetable Broth
¼ c. Heavy Cream
2 tsp. Fresh Lemon Zest
Olive Oil
Salt
Pepper

Instructions

Season shrimp with cayenne pepper, paprika, salt, and pepper.

Add olive oil to coat a large frypan and cook shrimp in batches over medium heat with the garlic, do not overcrowd the pan, for about 2 minutes on each side.

Remove shrimp and garlic from pan, set aside.

Add more olive oil and the sundried tomatoes to the pan, allow to warm, about 2 minutes.

Add orzo and vegetable broth to the pan. Season with salt and pepper. Bring to a boil over medium-high heat. Then reduce the heat and simmer for 7-8 minutes, until orzo has absorbed most of the liquid and is just about al dente.

Add heavy cream, shrimp, and lemon zest into the pan with the orzo. Fold to gently combine shrimp with the pasta, then simmer on low for 2-3 more minutes.

Serve immediately.
