Bratwurst with Bacon Fried Cabbage

Ingredients
5 Bacon Slices, medium chopped
1 Head of Green Cabbage, medium chopped
1 Yellow Onion, medium diced
3 Fresh Garlic Cloves, minced
Salt
Pepper
4 Bratwurst Sausages
4 Sausage Rolls, for serving
Whole Grain Mustard, for serving
Instructions
For Bacon Fried Cabbage:
Preheat a cast iron skillet on medium-high heat.
Add bacon to pan and fry until crispy.
Add onion, cook until the onion is translucent, about 8
minutes.
Add garlic to pan, cook until fragrant, about 2 minutes.
Add cabbage to pan, season with salt and pepper, then
continue cooking until reduced in size by half and tender, about 10 minutes.
Remove from pan and set aside until ready to use as a
topping.
For Bratwurst:
Preheat oven to 400°F.
Line baking sheet with parchment paper.
Place sausages 1½ inches apart on baking sheet.
Cook for 15 minutes, flipping halfway through.
Broil on high for 2-3 minutes.
Remove the bratwursts from the oven, serve immediately on
rolls, topped with the bacon fried cabbage and mustard.
