Za'atar Roasted Carrots with Gremolata

Ingredients
2 lbs. Rainbow Carrots, peeled and trimmed
Olive Oil
Salt
For Za’atar:
2 tsp. Za’atar Herb
1 tsp. Toasted Sesame Seeds
1 tsp. Ground Sumac
1 tsp. Ground Coriander
Salt
For Gremolata:
1 bunch of Flat Leaf Parsley, finely chopped
3 Fresh Garlic Cloves, peeled and minced
2 Tbsp. Fresh Lemon Juice
1 Tbsp. Lemon Zest
1 Tbsp. Olive Oil
Instructions
Preheat oven to 400°F.
Prepare a baking sheet with parchment paper.
Combine all ingredients for the za’atar, then add a drizzle of olive oil and toss the carrots in the mixture.
Roast the carrots until fork tender, for about 20-30 minutes, depending on their size, flipping once halfway through the roasting time.
Combine all ingredients for the gremolata.
Spread the gremolata over the carrots to serve.
