 Red Pear Waldorf Salad

Ingredients

8 c. Arugula 
2 Red Pears, thinly sliced
10-15 Black Grapes, sliced in half 
1 Celery Rib, thinly sliced
1 c. Walnuts, shelled
½ c. Greek Yogurt
1 Tbsp. Honey
2-3 Tbsp. Fresh Lemon Juice
Salt
Pepper 

Instructions


Combine Greek yogurt, honey, lemon juice, salt, and pepper in a small bowl. Whisk to thoroughly combine. Add sliced grapes, celery, and the walnuts to the dressing, then toss to coat the ingredients. 

Place arugula into a serving bowl. 

Arrange sliced pear on top of arugula. 

Top the arugula with the dressing-covered grapes, celery, and walnuts. 

Add the remaining dressing as desired. 

Serve immediately.
