Pan Seared Scallops

Pan Seared Scallops

 2 Servings | 3-minute Prep Time | 5-minute Cook Time

Ingredients 

8 Scallops 
2 Tbsp. Olive Oil 
2 Tbsp. Butter 
2 Tbsp. Fresh Parsley, finely chopped  
2 Fresh Lemon Wedges
Salt
Pepper 

Instructions 

Pat the scallops dry and season with salt and pepper. 

Add oil and butter to a heavy-bottomed pan, over high heat. 

Add scallops to the pan and sear until golden, about 1-2 minutes.

Flip the scallops and add the majority of the parsley to the pan, then sear until golden, about 1-2 minutes more. 

Remove from the pan and ladle the remaining butter and oil mixture from the pan over the top of the scallops. 

Sprinkle with more fresh parsley. 

Squeeze lemon wedge over the top of the scallops. 

Serve immediately.
