Skyr Bowl v.2

Ingredients
¼ c. Oat Milk
1 Tbsp. Chia Seeds
1 c. Fresh Blueberries, plus more for topping
1 Tbsp. Granulated Sugar
½ Tbsp. Fresh Lemon Juice
¼ tsp. Ground Cinnamon
½ c. Dried Cranberries
¼ c. Walnuts, chopped
1 ½ c. Skyr
Fresh Mint Leaves
Instructions
Place chia seeds and oat milk in a sealable container and let soak in the refrigerator overnight.
Prepare the blueberry sauce by adding blueberries, sugar, lemon juice, and ground cinnamon to a small saucepan over medium-low heat. Smash fruit once it has been heated through.
Reduce until a thick sauce forms, but it is not yet jam, about 5-10 minutes.
Strain. Let cool.
Toast walnuts in a small frypan over medium-low heat until fragrant, about 2-3 minutes.
Assemble the bowl by topping skyr with blueberry sauce, overnight chia seeds, dried cranberries, toasted walnuts, and fresh mint leaves.
