Caviar Potatoes

Ingredients
12 Yellow Creamer Potatoes
Olive Oil
Salt
Crème fraîche
4 oz. Prosciutto
Chives, finely chopped
2 oz. Osetra Caviar
Instructions
In a medium-sized saucepan, cover the potatoes with cold water.
Add a heavy amount of salt to the water.
Bring potatoes to a boil, then cover and let cook until fork tender, about 10 minutes.
Once potatoes are soft, remove them from the water. Place them on a cutting board and carefully press down on each potato until flat. Use the back of another, clean pan to press down. Alternatively, cover the potato with a towel to protect your skin and press down with the palm of your hand to flatten. Do not smash entirely, just enough to break the skin and be left with two flattened sides.
Preheat a cast-iron skillet over medium-high heat.
Add olive oil to the pan.
Transfer flattened potatoes to the skillet and fry on both sides, flipping once, until golden brown and crispy, about 3 minutes on each side.
Remove the potatoes and let them drain on a paper towel.
Plate the potatoes and top each one with crème fraîche, prosciutto, chives, and the caviar.
Serve immediately.
