Skyr Bowl v.3
2 Servings | 10-minute Prep Time | 15-minute Cook Time | Overnight Rest Time
Ingredients
¼ c. Oat Milk
1 Tbsp. Chia Seeds
1 c. Fresh Strawberries, plus more for topping
1 Tbsp. Granulated Sugar
½ Tbsp. Fresh Lemon Juice
½ Tbsp. Matcha Powder
1 ½ c. Skyr
3 Squares of Dark Chocolate
¼ c. Walnuts, chopped
Fresh Mint Leaves
Instructions
Place chia seeds and oat milk in a sealable container and let soak in the refrigerator overnight.
Prepare the strawberry sauce by adding strawberries, sugar, and lemon juice to a small saucepan over medium-low heat. Smash fruit once it has been heated through.
Reduce until a thick sauce forms, but it is not yet jam, about 5-10 minutes.
Strain the seeds out through a fine mesh sieve. Let cool.
Toast walnuts in a small frypan over medium-low heat until fragrant, about 2-3 minutes.
Mix the matcha powder into the skyr.
Assemble the bowl by topping the skyr with the strawberry sauce, overnight chia seeds, dark chocolate squares, toasted walnuts, remaining strawberries, and fresh mint leaves. Can shave some of the dark chocolate over the assembled bowl, if desired.
Serve immediately.
